HIGHLAND RASPBERRY AND CREAM FRENCH TOAST Makes 2 servings Plan ahead for this one! Soak the bread overnight or at least several hours before cooking.
3 large eggs ¾ cup half-and-half 6 slices French bread, sliced ½-inch thick ½ cup (1 stick) butter, melted ½ cup frozen freezer raspberry jam, or any other favorite flavor (recipe for freezer jam can be found inside box of liquid fruit pectin) 2 tablespoons butter, for griddle Powdered sugar, for garnish Fresh fruit, for garnish
In small bowl, mix together eggs and half-and-half. Blend well. Place bread slices in an ungreased 11x7-inch baking dish. Pour egg mixture evenly over bread. Cover and refrigerate for several hours or overnight until liquid is absorbed.
To make sauce: In a small bowl, mix together melted butter and jam until well combined. Set aside until ready to serve. (The sauce can be prepared in advance and refrigerated.)
To prepare French toast: PREHEAT GRIDDLE TO 350 DEGREES F. Melt 2 tablespoons butter on griddle and cook bread slices for approximately 8 minutes each side. Warm sauce, stirring well, and drizzle over French toast. Sprinkle with powdered sugar. Garnish with fresh fruit on top.
