SNICKERDOODLES Makes about 4 dozen (3 ½-inch) cookies These cookies are crisp around the edges, yet remain soft and chewy in the middle. Perfect!
1 cup (2 sticks) butter, room temperature 2 cups sugar 2 eggs 3 cups flour 2 teaspoons cream of tartar 1 teaspoon baking soda
¼ cup sugar 2 teaspoons cinnamon
PREHEAT OVEN TO 400 DEGREES F. In a large bowl, beat together butter and sugar. Add eggs, one at a time, beating well after each addition. Sift in flour, cream of tartar and baking soda. Mix well. Chill. Drop dough 2-inches apart (they spread while baking) on ungreased cookie sheet and press flat (use fingertips or heel of hand). Combine topping ingredients to make sugar/cinnamon mixture. Sprinkle on top of cookies. Bake for 6-7 minutes. (They will be pale and not look done.) Let rest on cookie sheet a minute or two and remove to wire rack to cool.
